My Version of "Take Away" Fried Rice

Spring has officially arrived in the land down under. Well, spring really starts on september but that month felt like winter. But now, you can see the sun almost everyday and sweat without doing nothing. Yesterday was probably the hottest one yet. I was sweating like a pig and there isn't even a cool breeze. Where is it when you need it, right? Anyway, spring is here which means the sun is up even longer and for us, this is an advantage. Me, Patrick and Baby K has started our walk around the neighbourhood after dinner. It's around 6:30 to 7pm which is just right because it isn't too hot or too cold. 


In these walks, we always pass the fish and chips shop which is very tempting. One of my favourite food to order from that shop is the chicken fried rice. They make it very tasty and it is so hard to resist. Because of that, I tried to make my own version of fried rice and it was good on the first try. That is what they have been telling me anyway. Here is the recipe of what I did:

2 cups of cooked rice
2 eggs, scrambled
chopped pre cooked bacon (or any meat you like)
1 cup frozen mixed vegetables
half of onion, chopped
1 tbsp soy sauce
vegetable oil
pepper

Saute the onion first. Make sure that it isn't burnt because it will give a different taste to the rice. Put in the pre cooked bacon and then the mixed veges. Stir until the vegetables are cooked enough. Put in the scrambled egg and then the rice. Mix and mix until the rice and veges are distributed evenly. Lastly, put a little or more (depends on how much you want) of soy sauce. Sprinkle a bit of pepper to taste. I love having pepper on my fried rice. 


I think I did a pretty good job. Cooking fried rice is pretty easy, it's just the take away fried rice seems to have a different taste to it. Now I know they add soy sauce to it. Theirs is actually oily but of course, I only used a little oil because it's too unhealthy. I have made this twice this week because it's easy, you just put everything together and it's done.   2. Wow, Danielle, I absolutely love chicken fried rice - it's one of my favourite recipes to make! I put scrambled eggs in it too and I make it exactly the same way you do! Our local fish and chip shop doesn't offer this dish though - no healthier alternatives there for us :) Hope you have a lovely week. xx
