Pink Velvet Cupcake Attempt

Despite having a rough week, I tried to squeeze in baking. Next sunday is baby K's Christening and I wanted to practice the pink velvet cupcake that I'll be baking to make sure it won't be bad. So yesterday, I gave it a try. Yes, pink for girls is too mainstream but I wanted her to be so girly. Also, after the Christening ceremony there will be an afternoon high tea to celebrate her Christening. For that, I wanted to make pink velvet cupcakes. I tried this recipe from The Foodie's Kitchen. It's a really easy recipe which made me like it even more. 


Somehow, it turned out redder than I thought but everything else is good. I just have to practice the frosting. I've never tried doing frosting before. I did a cream cheese once before but wasn't able to pipe it. I'm still thinking of what frosting to put. Anyway, it's better than what I thought. I was imagining a non edible velvet cupcake from me. I don't know why but I just find doing velvet cupcakes a little harder than the basic ones. It's just probably me making things a lot harder than what they should be. But, I can't wait to do this next sunday. I hope they will like it.

I took out the car seat and put her there. She doesn't have a bouncer and she didn't like to be at her play gym at the time so I thought about the car seat. She didn't complain. I put some toys on the side and she just played and watched me. That car seat is just very helpful especially when it's just us at home and I need to do house chores, I'll just sit her there. She can even fall asleep on it. I was also lucky she was in a good mood that day.
